The production of dairy products is one of the most important branches of the food industry, which provides the population with the necessary nutrients. However, along with the production of such products, there is a significant amount of waste that can have a negative impact on the environment and human health. These wastes consist of various materials, including whey, milk residues, packaging materials, which require proper environmental management. In the article, we will consider the problems of dairy production waste, their harm to the environment and human health, as well as effective methods of reducing this harm.

Dairy production waste consists of a variety of components, which may include both organic and inorganic materials. The main wastes arising in the production process include:

• whey, which is formed as a result of the production of cheese and yogurts;
• residues of milk remaining after processing and cleaning;
• packaging materials, including plastic, cardboard and other materials.

These wastes are often rich in organic matter that can decompose quickly, releasing methane and other greenhouse gases. In addition, packaging materials may contain hazardous chemicals that enter the environment, contaminating soil and water resources.

According to research, about 20 million tons of whey waste is generated annually in the world, most of which is not used properly. In order to reduce the negative impact of dairy production waste on the environment and human health, it is necessary to implement effective methods of ecological waste management. One such method is the reuse (R7) of whey waste in the production of animal feed or biogas. This allows not only to reduce the amount of waste, but also to obtain additional economic benefits.

Operations for collection, sorting, crushing and processing (D13) of dairy production waste must be carried out taking into account all environmental standards in order to minimize their negative impact on the environment. Using environmentally friendly packaging materials that can be easily recycled or composted is also an important step in reducing the harmful impact on nature.

Dairy production waste should be transported in accordance with current environmental regulations to avoid environmental pollution during transportation. The introduction of innovative technologies in the production of dairy products, such as the use of biotechnology for waste processing, will also contribute to reducing their harmful effects.
